Fruit and Berry Crumble

Our favorite summer dessert when fruit and berries are everywhere! And, when we’re craving a summer hit “out of season,” we use frozen.

Fruit and Berry Crumble

  • 4 cups peaches, sliced or rhubarb, 1-inch diced (4-5 stalks)
  • 4 cups of fresh or frozen berries
  • ¼ cup honey
  • ¾ cup all purpose flour
  • ½ cup rolled oats
  • ½ cup light brown sugar
  • ¼ teaspoon cinnamon
  • pinch of salt
  • 1 stick cold unsalted butter, cut into pieces

Preheat the oven to 375°. In a large bowl, mix fruit. Drizzle with honey. Sprinkle with 4 tablespoons of the flour and toss. Transfer fruit to an 9 x 11 baking dish.

In a large bowl, mix remaining flour, oats, brown sugar, cinnamon, salt and butter with a pastry blender or your fingers until mixture forms large, crumbly lumps. Sprinkle over fruit.

Bake until golden brown, 45-50 minutes. Serve with a cup of tea or warm with a scoop of vanilla ice cream.
